Grilled Rooster, Lentil and Peach Salad

Grilling peaches makes them further juicy and candy, offering an ideal counterpoint to grilled hen and earthy French lentils on this heat, principal course salad. Grilled Rooster, Lentil and Peach Salad

Substances

  • 1/2 cup (95g) French inexperienced lentils (lentils du puy)
  • 3 cups (720g) water

  • 2 tbsp shallots, finely chopped
  • 1 1/2 tbsp apple cider vinegar

  • 1 tbsp honey
  • 3 garlic cloves, finely chopped
  • 1/4 tsp black pepper
  • 4 (6 oz./170g) boneless skinless hen breasts
  • 2 giant (175 g)  peaches, halved and pitted
  • 1/2 cup (12g) loosely packed mint leaves, torn
  • 1/2 cup (12g) loosely packed basil leaves, torn

Instructions

In a small saucepan, mix the lentils with 3 cups (720g) water and 1/2 tsp salt. Convey to a boil, cut back to a simmer, and cook dinner till the lentils are simply tender, about 25 minutes. Drain.

Whereas the lentils are cooking, preheat a grill over medium warmth (375–400°F).

In a medium bowl, mix the remaining 1/4 tsp salt, oil, shallots, vinegar, mustard, honey, garlic, and pepper.

Switch 2 tbsp of the dressing to a different bowl. Add the hen and toss to coat. Set the remaining dressing apart for serving.

Place the hen and peach halves (minimize aspect down) on the grill. Cook dinner the hen for about 5 minutes per aspect, or till it reaches 165°F (74°C). Grill the peaches for about 5 minutes, till calmly charred and softened.

Switch the hen and peaches to a chopping board and let relaxation for five minutes. Slice the hen and minimize the peaches into bite-size items.
